ELEGANT ITALIAN-STYLE LEFTOVERS

Here’s the recipe from top London chef Angela Hartnett:

Pre-heat the grill. Heat some oil in a large frying pan and sauté bits of bacon or ham.

Add any roughly chopped leftover vegetables, and some diced cooked potatoes. Add a chopped onion and sauté just until it’s all heated through.

Beat some eggs in a bowl, season, then pour into the pan, tilting it to draw the egg from the sides into the center until the egg is set underneath.

Sprinkle generously with grated Parmesan and put under the grill until the top is just set.

Scatter with chopped basil or parsley and serve.
